You can copy the text in the PDF but not be able to edit it. The best you can do is to Save As your PDF file as Microsoft Word files and start editing from there. During saving, Acrobat PDF will automatically tigger the OCR and then save their content into Word file.
You can’t edit scanned text in Acrobat, unless you convert it first from an image to real text using OCR, and even that is extremely limited. You can remove parts of an image using the Redaction tool.
14/01/2015 · Edit: I never think of using the OpenOffice PDF extension, as all my work from scanned text requires total reformatting of the document, at a level which is beyond the limited capabilities of the OO PDF extension. I do use OO for the layout when I have recognised the text using an OCR program.
